Red Pepper and Black Bean Salad


The Vinaigrette:

In a small bowl mix:

  • 3 TBSP olive oil
  • 3 TBSP white wine vinegar
  • 1 TBSP honey
  • 1/2 tsp dried thyme
  • 1 tsp Salt

The Salad: 

In a large bowl mix:

  • 1 can of black beans, drained and rinsed
  • 1 can of whole kernel corn, drained and rinsed
  • 1 red or yellow pepper, sliced, and diced
  • 3 slices red onion, diced
  • 1 clove of garlic, minced
  • In a separate bowl Mix

Pour the dressing over the salad, and stir occasionally to ensure the vinaigrette soaks into all ingredients.
