Faux Taters

 

1 cauliflower head

2 cloves garlic

1 laughing cow light wedge (flavor your choice)

Salt and pepper

Green onion (optional)

 

  1. Boil the cauliflower until soft – 10-15 mins
  2. Drain and mash like potatoes
  3. To make smoother mix with a hand blender
  4. Add garlic (1-2 cloves), salt and pepper to taste, and laughing cow light cheese.
  5. Makes 4 servings.

Serve with 100 grams lean meat, and 2 cups of veggies.

This makes for an easy substitution to lower carbs, and calories.
