Broccoli Salad

 

4 cups broccoli, chopped – about 2 bunches.

1/3 cup reduced fat mayonnaise (Kraft)

2 packages Splenda (about 3-4 tsp Splenda)

¼ cup onions finely diced

2 TBSP pre cooked bacon bits

Salt and pepper to taste

 

Broccoli:

  1. Blanch the broccoli quickly in a pot of boiling water.
  2. Cut off all florets, and chop to desired size
  3. Let drain and cool

 

Sauce:

  1. In a medium sized bowel, mix mayonnaise, splenda, onions, bacon bits, and salt and pepper.
  2. Add cooled broccoli to the sauces, and mix gently.
  3. Let stand 20 minutes before serving.
