Black Bean, Corn + Red Pepper Salad
The Vinaigrette:
In a small bowl mix:
- 2-3 TBSP olive oil
- 3 TBSP white wine vinegar
- 1 TBSP honey
- 1 tsp dried thyme
- 1 tsp Salt
The Salad:
In a large bowl mix:
- 1 can of black beans, drained and rinsed
- 1 can of whole kernel corn, drained and rinsed
- 1 red or yellow pepper, sliced and diced
- 3 slices red onion, diced
- 1 clove of garlic, minced
- In a separate bowl Mix
Pour the dressing over the salad to marinade, and stir occasionally to ensure the vinaigrette soaks into all ingredients.
