Faux Taters
1 cauliflower head
2 cloves garlic
1 laughing cow light wedge (flavor your choice)
Salt and pepper
Green onion (optional)
- Boil the cauliflower until soft – 10-15 mins
- Drain and mash like potatoes
- To make smoother mix with a hand blender
- Add garlic (1-2 cloves), salt and pepper to taste, and laughing cow light cheese.
- Makes 4 servings.
