Broccoli Salad
4 cups broccoli, chopped – about 2 bunches.
1/3 cup reduced fat mayonnaise (Kraft)
2 packages Splenda (about 3-4 tsp Splenda)
¼ cup onions finely diced
2 TBSP pre cooked bacon bits
Salt and pepper to taste
Broccoli:
- Blanch the broccoli quickly in a pot of boiling water.
- Cut off all florets, and chop to desired size
- Let drain and cool
Sauce:
- In a medium sized bowel, mix mayonnaise, splenda, onions, bacon bits, and salt and pepper.
- Add cooled broccoli to the sauces, and mix gently.
- Let stand 20 minutes before serving.
